What happens to my extra apps if my Pro subscription ends?

You drop back to the free tier (3 apps), and nothing is deleted, your accounts and data are untouched. You'd just choose which 3 apps stay active, or resubscribe to unlock unlimited again. Because everything is your own local sessions, ending Pro never wipes anything; it only re-applies the 3-app limit.
